Leave It to Ina Garten to Make Avocado Toast Even Better
Even Ina Garten finds it hard to cook sometimes. The Barefoot Contessa has been posting ever-so-relatable recipes and messages on Instagram lately, from acknowledging pandemic anxiety while sharing pantry recipes to giving us a much-needed laugh with her gigantic quarantine cocktail.
Now, she’s sharing her recipe for that Millennial favorite, avocado toast, with the amped-up-but-still easy twist of topping it with a soft-boiled egg — and pairing it with a comforting message: “Today in his wonderful @nytimes newsletter, @samsifton wrote, “There are days these days when it seems heroic just to fry an egg and eat it on toast.” Boy, can I relate to that (and I love to cook)!! Fortunately, for breakfast, lunch, or dinner I always have an Avocado Toast up my sleeve. It hardly needs a recipe but my secret is a 6 1/2 minute jammy egg that comes out perfectly every time (see the details in the recipe link in my profile). #staysafeoutthere”
To make Garten’s signature avocado toast, you’ll need eggs, rustic bread, and ripe avocados, plus Sriracha, lemon juice, kosher salt, and ground black pepper for seasoning. (You can get the full recipe in her link in bio.)
The toast, of course, sounds delicious, but frankly, we’re finding Sifton’s words — and Garten’s confession that they hit home for her, too — equally comforting right now.
